Hail to the Pancake and Waffle!

As most of you know, I am pretty ritualistic with my morning routine of hot water & lemon, a cup of my delicious coffee with organic half and half, and a energizing breakfast to start my day -- usually some kind of nutrient dense shake, egg or oatmeal. But sometimes? It just becomes a little monotonous (like everything else) until we decide to be curious about what else floats our taste buds' boat.

Enter: the search for another delicious breakfast choice. 

I would call myself a nutrient-dense food “seeker.” I love to research new products, try them out, and offer them up to family and friends. I then see how they are working for me & also get some really good feedback before offering them out to my clients and followers! (IE: I don't recommend off the cuff! These are tried & true.)  

Of course, everyone has different opinions on what tastes good.... too salty, too sweet, not enough sweetness, a bit savory, over the top or way too bland. With that in mind, I want to share something that has given my taste buds a sense of comfort and pleasure knowing that we CAN indulge in pancakes and also get the nutrition our body craves. (No guilt!) 

I've loved adding these pancakes to my morning rituals. I hope you will love them just as much as I do!

Hail to Birch Bender Paleo Pancakes Mix!

Let's go over all the ingredients so you can see why these are not just ANY pancakes, but TRULY are nutrient-dense deliciousness to start your day off right! 

Firstly, 'paleo' means there is no grain added to this batter. Instead of the grain wheat, Birch Benders use Coconut and Almond Flour -- yes, made from the meat of coconut and almonds. Another ingredient is Cassava Starch which is made from a root vegetable!!! (Bonus points for getting veggies in for breakfast? I think so.) The starch and flours make this product GLUTEN FREE to boot! The final ingredients are eggs. salt, and monk fruit for sweetness. Monk Fruit may be new to you. It is 100% pure, all-natural sugar substitute from the real monk fruit itself. It is a great alternative to the chemical sweetener aspartame.

I have made these pancakes and waffles for all of our visitors here in Steamboat! 

The results? My visitors ordered the mix online immediately! With the six ingredients, a bit of sweetness, protein, fiber, low carbohydrate and fluffy tasty goodness. Again, Hail to Birch Bender!

Suggestions

The serving size is 2 pancakes/waffles.

Here are some options I love to top them off with:

- A smear of nut butter

- 1/2 cup mixed berries or a banana mixture

- Craving extra protein? Top it with a soft or fried egg

Nope, I do not need syrup… its sweet enough without that added sugar! Plus, the best way to dull our sugar cravings is by cutting way back on sugar; think fruit instead of processed sugar when you want sweetness. (Sometimes it's not easy but it's well worth your health and wellness. Agreed?)
